I am all about making things simple and tasty, if i can have those two things I am forever happy.
One of the most stressful and overwhelming things I have found about adapting and overcoming transitions in lifestyle is your ability to feel that it can be accomplished with relative ease.
There is nothing more discouraging that feeling like you slave not only to eat well, but to prep these said healthy meals. It tends to be nothing short of your whole day... on top of that you have to deal with cravings and feeling like in order to satisfy that craving you have to make everything from scratch...again!
I've felt like that and I don't want anyone else to feel like that... I am anti-overwhelm and am here to make your life easier not more stressful.
So slowly I am starting to include low maintenance recipes that will help the individual to feel that health can be accomplished and it doesn't have to feel like your whole life is cooking, prepping and cleaning up all day long.
This is one of those meals that accomplishes everything. It tastes good, it's easy and with little to no clean up! Yup, whoever invented the kebab was next level ninja
So if you know me I always encourage lean white meats. It doesn't seem that fun until you learn that nearly everything can be substituted by some form of turkey.
If you want burger, turkey burger,
if you want bacon opt for turkey bacon ( in fact I like turkey bacon better than regular bacon and that is saying something)
If you want sausage, turkey sausage... haha those that are experienced in health feel those of us that are less experienced. And they try to find healthy solutions for our most loved food choices.
So we don't really have to feel left out. If your determined enough you can have pizza, cupcakes, donuts, brownies, burgers etc.... its all in the expansion of imagination and innovation.
So for this recipe, I use turkey bacon, its so YUMMY and just adds such a wonderful profile to these kebabs.. along with good old fashioned chicken, pineapple, onion, green peppers and a honey lime glaze you cant go wrong..

Kebabs:

Ingredients:
2-3 chicken breasts fresh or frozen
5 pieces of turkey bacon chopped
1 medium onion chopped vertically
1 cucumber ( optional)
1 green/red pepper
1 can of pineapple chunks
1/4 cup honey
Juice of 1 lime
A set of skewers, metal or wooden ( i prefer metal)
Instructions:
If you have wooden skewers soak in water overnight
Prep and preheat grill (medium high)
Cut up chicken into 1 inch slices, (if chicken is frozen defrost in microwave).
Cut up turkey bacon into 7 smaller sections and set meats aside.
Cut up vegetables
prepare honey glaze by combining honey and lime together and whisking in a small bowl, pour half into another container to coat half way through cooking on the grill
arrange kebabs however you would like with selected meats fruits and veggies
with a brush put honey lime glaze on the tops and bottoms of each kebab
cook on the grill for 7 minutes (keep the lid down for even cooking)
Flip and then cook for 7 minutes longer
